How to make incredibly tasty breakfast enchiladas

Thanks for watching Its Only Food w/Chef John Politte. In this video we are showing you how to make Breakfast Enchiladas. Here is the recipe: Ingredients • 1 pound breakfast sausage • ½ diced onion • ½ diced red pepper • 7 ounces green chilies • 2 cups cheddar cheese • 8 large eggs • 10 can of green chili sauce Method Preheat oven to 350 degrees 1. In a large skillet cook the sausage, onion, and red pepper 2. When the sausage is cooked, and the onion and pepper are soft add the green chilies and stir well 3. Add the eggs to the pan, stir well and cook until set 4. After eggs are set, remove the pan from heat and assemble the enchiladas by rolling about ¼ cup of the mixture in the flour tortilla, roll tightly and leave the ends open, place the filled tortilla seam side down in a 7 x 11 casserole dish or aluminum baking dish. 5. When all eight tortillas are in the dish, cover with the enchilada sauce, cover with cheese, and bake covered, in the oven for 20 minutes, so cheese is melted, and the sauce is piping hot. Enjoy!
