Whether or not you pull out all the stops for Cinco de Mayo each year, there’s no better time to make this one a celebration to remember — even if it just involves a handful of loved ones or a Zoom link. One of our favorite ways to celebrate Cinco de Mayo is a long weekend in Mexico, experiencing the country’s unique cuisine, terrain, and mezcal, and we’ll certainly miss enjoying our favorite stretches of the Yucatan and Baja Peninsulas.

In lieu of a Cinco de Mayo celebration in Cancun or at your neighborhood cantina, some of our favorite resorts are helping us put on a spectacular Cinco de Mayo from home. Read on for authentic recipes, clever crafts, and a party-ready playlist that will keep your fiesta going for hours.

One&Only Palmilla

One&Only Palmilla is an absolute dream for those looking for a secluded getaway on the Baja Peninsula (and who isn’t?). The resort was recently voted one of the best resorts in the world, and anyone who has visited knows why.

This sprawling estate has a deep-blue ocean view from nearly every facility, and we are longing to experience them once again soon. Thankfully, we can at least experience Cinco de Mayo in One&Only-style this year, no matter where we are in the world.

Belmond Maroma Guacamole

Serves 10
Ingredients:

  • 3 tablespoons chopped grasshoppers (optional)
  • 5 avocados
  • Salt to taste
  • 7 tablespoons fresh lime juice
  • 3 red tomatoes, diced
  • 1/4 red onion, chopped
  • 1 bunch fresh cilantro, chopped
  • 1 ounce mezcal (optional)

Directions:

  1. In a clean bowl, add the grasshoppers, avocado, and salt. Mix until you get a nice paste.
  2. Add lime juice. Mix and let stand for 1 minute.
  3. Add the tomato, onion, cilantro, and the mezcal, and mix well.

While one of the newest luxury resorts in the iconic vacation spot, Grand Velas Los Cabos is already considered a top destination for visitors looking to experience the best views, accommodations, and amenities in Cabo. The resort will be hosting a virtual Cinco de Mayo party via Zoom at 2 p.m. EST Tuesday, hosted by acclaimed chef Mario Lopez. Lopez will teach virtual party-goers how to make authentic guacamole served with poached egg toasts and the viral Dalgona coffee, affectionately known as “whipped coffee,” made popular on the social media platform TikTok at the start of the COVID-19 pandemic.
