Shake well and strain into a small tumbler filled with cubed ice, preferably using a sieve4. Garnish with beetroot, lemon or fresh basil.

Slice off watermelon flesh and put it in a blender to puree lightly, enough to liquify the mixture. Strain through a fine mesh strainer to remove any pulp. Serve over cubed ice in a rocks glass and garnish with a wedge of watermelon.

Combine 40ml of Patron Tequila Reposado with 20ml of floral syrup, 20ml of Lime Juice and 5 fresh basil leaves and a dash of egg white in a shaker with no ice. Run it through a dry shake to allow all ingredients to initially blend together. Open the shaker and add ice cubes, hard shake for 15 seconds and double strain into a Margarita style coupette (no salted rim required). Garnish with a fresh basil leaf.
